I have been looking for new ways to use my coconut oil. While coconut oil is a saturated fat, it is quite healthy in moderate doses. Coconut oil has been villified in the past, but the health benefits are becoming more touted. The other day, I was browsing Facebook and found what looked to be the easiest dessert recipe of all time and it called for coconut oil.
Chocolate Coconut Fudge
- 1/2 Cup Coconut Oil
- 1/2 Cup Cocoa Powder
- 1/4 Cup Honey
- Mix all ingredients well in a bowl (if coconut oil on firmer side, melt a bit before mixing)
- Spoon mixture into a 6×6 or similarly sized glass dish
- Refrigerate for at least 2 hours and enjoy

If you have the actual coconut shell, here is a new use for them in the garden. Shred the shell and mulch with it. You can shred by utilizing a serrated knife, like one for bread. My theory is when you water, the nutrients from the coconut shell will make its way into the soil and help the plant to grow.
